Mahi

Mahi-Mahi (aka Dorado) has a translucent pinkish flesh with a mild, sweet flavor, moderately firm texture and large, moist flakes. It seasons and marinates well which makes it great to use in any recipe since is does not break apart easily.  It is a favorite for use in fish tacos.  Just be careful to not overcook this fish.
